10 mL Pampelle
30 mL Apple Juice
15 mL Lemon Juice
Egg White

Add all ingredients to shaker with ice.
Shake & fine strain.

Garnish: Spray of bitters (Angostura)

 

To make infused vodka; add 4 teaspoons of T2 Watermelon Sorbet to a full bottle of vodka.
Leave to infuse for 1-3 days in a warm place.

To make the gin, infuse 4 teaspoons of Cocolate Chai Tea into one full bottle of gin.
Leave in a warm place for 1-3 days.

1) Boil water
2) Add sugar at a minimum of 1-1 ratio (more sugar is better) and sliced red chilli (2 chilli’s per 500mL syrup)
3) Heat whilst stirring
4) Once all sugar has dissolved, allow to cool

To make vodka infusion, add 2 teaspoons of powdered wasabi to 1 bottle of vodka.
Shake hard & let sit for 1-3 days.
Ensure you give the bottle a good shake before each use.

Dry – discard Noilly
Wet – Keep Noilly

Vodka = Any – Recommend Grey Goose
Gin = Any – Recommend Beefeater 24

Add ice and Vermouth to Boston. Rinse; discard (if Dry); then add Gin/Vodka. Stir 18-20 times till chilled and diluted. Fine strain into a Martini

60 ml Bourbon
15 mL Sugar Syrup or 1 sugar cube
1 Maraschino Cherry
2 x Dash of Bitters
Orange Zest

Soak Sugar in Bitters. Bash Cherry and Orange in mixing glass. Fill with ice and add 15mL Bourbon. Stir. Add 30 ml Bourbon and more ice. Stir to diluted. Add more ice & last 15mL Bourbon. Stir. Julep strain over fresh ice into DOF.
